Tomatoes Provencal
  • 6 chopped Roma tomatoes
  • 8 oz pitted Kalamata Olives
  • 2 tbsp sliced Red onion
  • 1-2 cloves chopped garlic
  • 6 leaves chopped fresh Basil
  • Juice of 1 lemon
  • Squeeze of Stevita (to taste)
  • Sea salt to taste 

Mix all together in a bowl and enjoy!

Serving options:

Makes a great quick salad on top of a bed of lettuce.

Roll up in a cabbage leaf for a tasty sandwich.

Or just eat with a spoon out of the bowl!


Cabbage Sandwiches

Original version:

  •  1 cabbage leaf
  • 2-3 thin slices Raw goat cheddar
  • 1 tbsp. Organic Dijon mustard
  • Optional additions: sprouts and/or tomatoes

Roll all the ingredients up in the cabbage leaf and enjoy!

Pizza sandwich version:

  •  1 cabbage leaf
  • 2-3 thin slices Raw goat cheddar
  • 1 tbsp. Organic marinara sauce
  • Oregano or pizza seasoning to taste
