- 1 head romaine, finely chopped
- 2 plum tomatoes, small diced
- 1 green bell pepper, small diced
- ½ red onion, small diced
- ½ cup kalamata olives, chopped
- 1 handful parsley, chopped
- 1 lemon, juiced
- 1 tsp dried oregano or zaatar
Optional: goat feta, cubed
Toss all ingredients together.
