- 4 carrots, sliced (1/8 inch on a diagonal works best)
- 1 clove garlic, minced
- 2 tbsp parsley, chopped
- 1/8 tsp smoked paprika or regular paprika
- 1 lemon, juice and zest
- s/p to taste
Salt the carrots and let sit for half an hour or more. Rinse off salt and add rest of ingredients.
